Roasted Calabaza

1 Calabaza
6 Garlic Cloves
1.5 Tbs Lime juice
4 Tbs Olive oil
1.5 Tbs Vinegar
1/2 Tsp Cumin
1/4 Cup Cilantro leaves chopped

1. Whisk together in a small bowl: garlic cloves chopped, lime juice, olive oil, vinegar, cumin, & salt.
2. Cut Calabaza into chunks, remove seeds (leave skin on). Brush some of the dressing on the Calabaza chunks. Once brushed, add the cilantro to the dressing sauce and set aside.
3. Roast Calabaza on 375 for 1 hour until it’s soft.
4. Remove skin and cut out the cooked Calabaza
5. Add the rest of the dressing to the Calabaza
6. Serve & Enjoy
